This fig with goat cheese appetizer is a perfect delicacy to serve at weddings and gatherings that have a crisp atmosphere of summer or spring. The lemon zest, red wine and honey combination provides a tantalizing flavor that enhances the juicy sweetness of the figs.
In a small bowl, mix the thyme, lemon zest, garlic and goat cheese thoroughly. Cover the cheese and refrigerate for at least 8 hours, to give the flavors time to blend.
Rinse the figs and dry them.
Cut a cross cut from the top to the bottom, to quarter them, leaving the quarters still attached at the very bottom.
With a small spoon, press a tiny amount of the goat cheese into the cuts in each fig.
Tear of a small morsel of prosciutto and press this into the cheese.
Place a few pieces of walnuts on top of each fig, and decorate with a tiny sprig of thyme.
Mix the red win and honey, and drizzle this atop the figs.
Chill in the refrigerator for 15 minutes before serving.
