Ingredients

  • 3/4 Cup Sugar
  • 8 Ounces Cream Cheese
  • 5 Eggs Large
  • 14 Ounces Condensed Milk
  • 12 Ounces Evaporated Milk
  • 1 Teaspoon Vanilla Extract

Instructions

  • Preheat oven to 350 degrees F
  • In a small pan, heat the sugar until golden brown.
  • Pour the sugar liquid into a 10 inch round baking dish or divided equally into your individual flan molds, then tilt it and swirl the liquid around to coat the sides and bottom of the pan.
  • In a large metal mixing bowl, beat the cream cheese until it is smooth and creamy.
  • Beat in the condensed milk, then the evaporated milk, then the eggs, then the vanilla. Continue beating until mixed thoroughly.
  • Pour the mixture into your baking dish that you have coated in the sugar solution.
  • Line your roasting pan with a wet kitchen towel and place your flan on top of the towel.
  • Place the roasting pan in the oven then fill it with boiling water until the water reaches halfway up the side of the flan pan.
  • Bake for an hour, until the center is set.
  • Remove from the oven, and cool on a wire rack for an hour or two.
  • Place in the refrigerator for a minimum of 12 hours to allow it to chill thoroughly.
  • To remove from the pan, run a knife around the sides, then place your serving platter over the flan pan. Flip over, and set down until the flan releases from the pan.
